Slow Cooker Meatball Marinara Subs

This was a first for us but oh my gosh it has been added to our favourites list!

Ingredients

1/2 cup frozen onions

1/2 cup frozen peppers

3 garlic cloves

Fresh basil

Fresh oregano

Tinned chopped tomatoes

1 tbsp tomato purée

Good quality paprika (this is the secret!) both sweet and smoked/spicy

Tsp sugar

Tsp instant coffee

12 x beef meatballs (I have a recipe for homemade in another blog post if you want to go down that route!)

Method

Add onions, garlic and peppers to a lightly oiled pan along 2 tsp of both sweet and spicy paprika, fry until they begin to soften and remove from pan

Allow to cook for a few minutes before blitzing in a food processor

Add meatballs to the same pan (don’t clean, you want to soak up all of those lovely flavours!). Your aim is to brown the meatballs, not cook them through

Whilst the meatballs are browning add chopped tomatoes, tomato purée, fresh herbs, cracked black pepper and coffee to the slow cooker along with the blitzed onion mix and stir until well combined

Add meatballs and cook on low for 5 hours

Serve on fresh crusty bread with homemade chips, such a treat!
