Irish Flakemeal Biscuits


16oz butter

8oz caster sugar

10oz self raising flour plus extra for dusting

10oz oats

8oz coconut


Pre heat oven to 160c

In a mixer, cream together the butter and sugar until light in colour

Add the rest of the ingredients and mix well until it resembles a dough

Roll 1cm deep, using a cookie cutter cut your biscuits and place on a lined baking tray keeping them a few centimetres apart

Bake for 15 minutes or until golden brown and crispy

Allow to cool for 30 minutes then sprinkle with caster sugar or dip in chocolate
