This incredibly tender chicken requires very little prep time, you can get up first thing in the morning, prepare your bird and get on with your day until you are ready for a feast. Leftovers are fantastic for sandwiches. If you enjoy a roast chicken dinner I PROMISE you will love this recipe.
- One (1.5-1.7kg) whole chicken
- 40g real butter
- Handful of fresh basil
- Dried oregano
- Two garlic cloves
- Dried parsley
- Black pepper
- Sea salt
Firstly, NEVER wash chicken but make sure to give your hands a good wash between each instruction
Using a knife, carefully separate the chicken breast meat from the skin. Try not to cut the actual skin, you want to keep this intact to hold the juices in.
Thinly slice your butter and stuff evenly between the skin and breast along with two garlic cloves and a handful of fresh basil leaves.
Dust the chicken with dried parsley and oregano and place in the slow cooker dish upside down.
Season with cracked black pepper and sea salt.
Set your slow cooker to ‘low’ and cook for 9 hours.
