Crock-Pot Pulled Chicken

I’m kicking off my ‘toddler meals on a budget’ blog series with this versatile pulled chicken recipe. It is made in a slow cooker (crock-pot) and takes less than five minutes to prepare!

Recipe makes 13 generous portions.

  • Two large, free range chicken breasts
  • Three tins chopped tomatoes
  • One cup frozen peppers
  • Two large carrots
  • Tablespoon tomato purée
  • Teaspoon granulated sugar
  • Two teaspoons Cajun seasoning
  • One teaspoon dried parsley
  • One teaspoon dried oregano
  • Handful fresh basil




Wash, peel and chop carrots into toddler sized bites. Place in the crock-pot bowl along with one cup of frozen peppers.

Add all three tins of chopped tomatoes, tomato purée, sugar, Cajun seasoning, parsley and oregano.

Wash and tear basil leaves, add to the mix.

Place chicken breasts (whole) and stir until they are both well covered with sauce.

Place the lid on your crock-pot and cook on low for 9 hours.

After 9 hours, take two forks and ‘pull’ your chicken.

That’s it folks, as with the majority of my recipes it’s very simple! Serve with rice, pasta or as a baked potato filling.
