Irish Stew

This simple Irish stew recipe is perfect for crisp autumnal evenings, suitable for all the family and absolutely delicious.

You will get approximately eight servings from this recipe (depending on how big your bowls are…)

 

 

Ingredients

 

 

  • Six good sized potatoes
  • 400g lean steak pieces
  • One medium brown onion finely diced
  • Four large carrots peeled and chopped
  • Three garlic cloves
  • Tomato purée
  • Worcester sauce
  • Kallo low salt stock cube
  • Two pints boiling water
  • Coconut fry lite
  • Dried parsley
  • Dried oregano
  • Six fresh basil leaves

 

 

Method

 

 

Place a large stock pot over medium heat and spritz with coconut fry lite (or any type of cooking oil)

Add beef, carrots and onions to the pot and cover, cook for approximately five minutes or until the vegetables begin to soften

Crush three garlic cloves and add to the pan along with two pints of low salt kallo beef stock

For a thick stew, peel and quarter four tomatoes then finely dice the remaining two potatoes

Add one tablespoon of tomato purée, a few dashes of Worcester sauce, one dessert spoon of parley, one dessert spoon of oregano and six basil leaves (remember, tear don’t chop)

Give your stew a good stir and bring to the boil

Reduce temperature to a low simmer and cook for one hour

Finally, serve with fresh crusty bread and enjoy!
